Asparagus Risotto - Risotto is defined as “a dish of rice cooked with broth and flavored with grated cheese and other ingredients.” In short, the possibilities are endless. Here’s my take. First, add water (about halfway) to a large pot and bring to a low boil. Next, add Arborio rice (2 cups) and cook for about 7 minutes. Then, add asparagus (1 lb.), which has been pre-cut in to 1 in. sections. Cook for another 7 minutes or until rice and asparagus are tender. Drain and return to pot. Last, add butter (2 T.), Parmesan cheese (1 1/2 cups) and cream or Half-and-Half until you obtain your desired consistency. Salt and pepper to taste. Dig in!

I love television - The X Factor, Modern Family, Franklin & Bash, Awkward, Fashion Police. The list could go on and on (and on). Of course, I realize that it’s not the most productive pastime so I’m slightly ashamed about how much time I spend sprawled out on the couch. But, these television starlets have absolutely nothing to be ashamed about. They were the showstoppers at last Sunday’s Emmy Awards:
